Salsa, apart from being the popular Latin-American form of dance music, is also a type of condiment referring to spicy hot sauces. Salsa in the Spanish language means a sauce that serves as an accompaniment with snacks.

Ingredients

  • 5 Habanero Chiles (Roasted)
  • 4 Amarillo Chilies
  • 3 Scallions (chopped)
  • 1 Grapefruit (juiced)
  • 1 lime (zested and juiced)
  • 1 bunch Cilantro (chopped)
  • Salt (to taste)
  • Pepper (to taste)

Method

  • Soak the habanero and Amarillo chilies in hot water for about ten minutes.
  • Deseed them once you have removed them from the water.
  • Place the chilies in a food processor and enough of the soaking liquid to cover a quarter of the way.
  • Puree it into a fine paste.
  • Transfer the puree into a bowl and add chopped scallions, fruit juices, lime zest, and chopped cilantro to it.
  • Mix well. Season with salt and pepper and serve warm.

  • 5 Habanero Peppers
  • 3 Tomatoes
  • 1 Onion (chopped)
  • 1/3 cup Cilantro (chopped)
  • 4 Garlic cloves
  • Black Pepper (to taste)
  • Salt (to taste)
  • 8 oz Tomato sauce
  • 1 tsp Oregano (dried)

Method

  • Remove the seeds from the peppers.
  • Finely chop and combine all fresh ingredients except the garlic.
  • Press garlic into a mixture.
  • Add salt, pepper, oregano and tomato sauce. Mix it well.
  • You can pulse it in the food processor if you like to have a smoother texture.

Ingredients

  • 1 Yellow Sweet Pepper (diced)
  • 1 Red Sweet Pepper (diced)
  • 1 Orange Sweet Pepper (diced)
  • 4-8 Habanero Peppers
  • 4-8 Jalapeno Peppers
  • 1 Chipotle Pepper (diced)
  • 4 Banana Peppers (chopped)
  • 4 cups Sweet onion
  • 1 ½ cups White Sugar
  • ½ cup Brown Sugar
  • 1 cup Lime juice
  • 2 tbsp Garlic (minced)
  • 4 cups Tomato paste
  • 4 cups Vinegar
  • I bunch Cilantro
  • Salt (to taste)

Method

  • Dice the sweet peppers, chipotle pepper and the onion.
  • Peel and dice the tomatoes.
  • Finely chop the banana peppers and the cilantro.
  • Puree the habanero and jalapeño peppers in half a cup of vinegar.
  • Put the peppers, onion, tomatoes, hot pepper puree, vinegar, lime juice, garlic, cilantro, tomato paste, brown sugar and the rest of the ingredients in a cooking pot. Let it boil for twenty minutes and then reduce the heat to a simmer.
  • Add white sugar and salt. Simmer for ten minutes more and serve.
