Easy Blue Coco Smoothie Bowl Recipe

Smoothie bowls are incredibly popular right now, and it is not hard to see why. Blue Coco Smoothie Bowl is delicious – both for the stomach and the eyes! They make such an excellent start to your day. Packed full of fruity goodness and nutritious goodies that will keep you going.

I have to say, my favorite part of making a smoothie bowl is decorating it after. The smoothie itself is always such a wonderful color base and you can add whatever your heart desires to decorate it. The options are literally only limited by your own imagination.

Easy Blue Coco Smoothie Bowl Recipe

Ingredients

  • 2 cups frozen blueberries
  • 1 cup of coconut milk
  • 1 1/2 cup oats
  • 1 banana
  • 1 tsp vanilla essence
  • Dash of honey to taste
  • Decorations (I’ve used pumpkin seeds, linseed/flax, pomegranate, and fresh blueberries)

Directions

  • Toss everything, except the decorations, into a blender and blend away! You may need to add a dash more/less milk to make it the right thickness.

Smoothie bowls are meant to be eaten with a spoon (though I wouldn’t judge you for slurping it straight from the bowl!) and you want it to be thick enough for the decorations to lie on the surface.
Once you’ve dished the smoothie out, get creative with the decorations!

I can only speak for myself, but I could easily spend $15-18 on a smoothie bowl at a ‘trendy’ Auckland café (are Auckland café prices a bit ridiculous?!). So how awesome is it to be able to make café quality food in the comfort (and price range) of your own home? Priceless.
