Easy Watermelon Smoothie Bowl Recipe

Watermelon always seems to me like it is a summer fruit. You know, one to enjoy by a pool, in the sun at a BBQ, or on a picnic. It has such a light and refreshing taste, which is of course why it lends itself very well to those hot summer months.

HOWEVER, why not enjoy your watermelon in the cold months too?? That way you can keep pretending that wearing sunglasses and eating watermelon means it must be still kind of summer or summer is not that far away! Whatever keeps you going?

Ingredients

  • 1/4 small watermelon, skin off (often you can buy these in the supermarket pre-cut, saving you from having to it yourself!)
  • 100ml coconut milk (ish)
  • 100ml greek yogurt
  • 1/4 LSA
  • 1/4 granola
  • 1t honey
  • Seeds etc to decorate

Directions

  1. As always, throw everything into the blender and blend until smooth, adding in more liquid if necessary.
  2. For my decorations, I used pumpkin seeds, sunflower seeds, linseeds, chia seeds, and of course, a fresh raspberry.

You know, until I typed that out, I didn’t realize how many seeds I had used… I sound like I’m trying to feed a bird? Seeds just add such a wonderful texture to the watermelon smoothie and luckily they are good for you!
