  1. Never use pre-grated cheese.
    Always grate your own fresh. pre-grated cheese tends to have anti-caking agents like cellulose coating the individual pieces of grated cheese. This prevents the cheese from melting properly and it has the tendency to lack moisture.
  2. Do not cook tomato sauce for pizza.
    Use ripe tomatoes and puree or crush them by hand. Another option is to use a high-quality canned tomato and crush the canned tomatoes by hand. Cooked sauces tend to be too thick and heavy. A lite layer of fresh crushed tomatoes is best.
  3. Less is more.
    Do not put too many toppings on a pizza. The rule is usually three-topping to a pizza not including the sauce but it does include the cheese. Too many toppings lead to a soggy pizza. Too much moisture can ruin a great pizza crust.
  4. Pre-cook topping for your pizza.
    If you like mushrooms cook, cool, and season them before making your pizza. The same for most vegetables and meats such as sausage or meatballs. This helps to reduce the amount of moisture on the pizza and allows you to season your ingredients properly.
  5. Season your dough.
    Treat your pizza dough as an ingredient. Season with good olive oil and salt or a seasoning of your choice. The crust is the base for building your creation. A well-seasoned crust will start you off on the right foot.

Herbed Whole Wheat Pizza Dough

Ingredients:

  • 1 cup water
  • 2 tablespoons olive oil or cooking oil
  • 2 cups bread flour
  • 1 cup whole wheat flour
  • 2 teaspoons dried basil, oregano, or Italian seasoning, crushed
  • 3/4 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1 teaspoon active dry yeast or bread machine yeast
  • Cornmeal (optional)

Instructions:

  1. Add all of the ingredients except cornmeal to a 1-1/2- or 2-pound bread machine according to the manufacturer’s directions. Select the dough cycle.
  2. When the cycle is complete, remove the dough from the machine. Punch down. Cover and let rest for 10 minutes.
  3. For thin-crust pizza: Divide dough in half. For each pizza, grease an 11- or 12-inch pizza pan or a large baking sheet. If desired, sprinkle the pan with cornmeal.
  4. On a lightly floured surface, roll 1 portion of dough into a 12- to 13-inch circle. Transfer to the prepared pan, building up the edge slightly.
  5. Prick the crust with a fork. Do not let the dough rise.
  6. Bake in a 425-degree F oven for 10 to 12 minutes or until lightly browned. Add the desired topping.

Ingredients:

  • 1 cup warm water, 105°f to 115°f
  • 1/4 cup vegetable oil
  • 1 packet of active dry yeast
  • 2 cups flour

Instructions:

  1. Combine warm water, oil, and yeast; fold in the flour and mix thoroughly.
  2. Roll into a ball; place in an oiled bowl and let rise in the refrigerator overnight.
  3. Bring to room temperature before putting it in the pizza pan.
  4. Coat a deep-dish pizza pan with oil or cooking spray.
  5. Spread dough evenly around the bottom and sides of the pan.
  6. Cover with a cloth and let rise for 30 minutes at room temperature.
  7. Preheat oven to 450°F.
  8. Remove the cloth and cover the dough with preferred pizza toppings.

Ingredients:

  • 1 packet of active dry yeast
  • 1 cup of warm water
  • 1 tablespoon vegetable oil
  • 1 teaspoon salt
  • 3 cups flour, divided

Instructions:

  1. Dissolve yeast in warm water (105° to 115°F); stir in oil and salt. Beat with an electric mixer at low speed for 1 minute, scraping the sides of the bowl often.
  2. Continue beating for another 3 minutes at high speed. Fold in 2½ cups flour.
  3. Dust a work surface with flour and knead in enough remaining flour to make a moderately stiff dough that is smooth and elastic for 6 to 8 minutes.
  4. Grease a bowl and top of the dough. Cover and let rise in a warm place for 1 hour or until doubled.

  • 1 teaspoon Parmesan cheese, grated

  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 1 cup chopped mushrooms
  • 1 29-oz. can of stewed tomatoes
  • 1 6-oz. can tomato paste
  • 2 cloves garlic, peeled and chopped
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1 bay leaf
  • 1/8 teaspoon sugar
  • 1/8 tablespoon hot pepper sauce

Instructions:

  1. Heat oil in a large skillet.
  2. Add onions and sauté 1 minute.
  3. Add green pepper and sauté 3 minutes.
  4. Add mushrooms and cook for an additional 2 minutes, or until tender.
  5. Add stewed tomatoes, tomato paste, garlic, basil, oregano, bay leaf, sugar, and hot pepper sauce.
  6. Simmer for 30 minutes, stirring occasionally.

Italian Pizza Sauce

  • Ingredients:
  • 6 ounces tomato paste
  • 1 garlic clove, chopped

  • 1 pound pork sausages
