Summer’s coming and what better way to cool down than with watermelon! This smoothie is not only cooling and hydrating, the ginger and leafy greens help to detoxify and boost your immune system. Health benefits aside, you could always add a splash of vodka and enjoy a fruity vitamin-rich cocktail as you watch the sun go down!
- 1 handful of greens (Krispkut™ kale, spinach, or cos)
- Juice of one lemon
- 3 wedges of Watermelon
- ½ inch fresh ginger
- Place everything into a blender. Blend on high for 1 minute or until a rich bright green, smooth and creamy. Serve immediately as it is or if you prefer topped with berries.
- Note: If you have a regular blender (not a high-speed Vitamix), it’s best to blend the liquid and fruit first. Then add the greens, then ice.
