  1. Never use pre-grated cheese.
    Always grate your own fresh. pre-grated cheese tends to have anti-caking agents like cellulose coating the individual pieces of grated cheese. This prevents the cheese from melting properly and it has the tendency to lack moisture.
  2. Do not cook tomato sauce for pizza.
    Use ripe tomatoes and puree or crush by hand. Another option is to use a high quality canned tomato and crush the canned tomatoes by hand. Cooked sauces tend to be too thick and heavy. A lite layer of fresh crushed tomatoes is best.
  3. Less is more.
    Do not put too many toppings on a pizza. The rule is usually three-topping to a pizza not including the sauce but it does include the cheese. Too many toppings lead to a soggy pizza. Too much moisture can ruin a great pizza crust.
  4. Pre-cook topping for your pizza.
    If you like mushrooms cook, cool, and season them before making your pizza. The same for most vegetables and meats such as sausage or meatballs. This helps to reduce the amount of moisture on the pizza and allows you to season your ingredients properly.

Herbed Whole Wheat Pizza Dough


  • 1 cup water
  • 2 tablespoons olive oil or cooking oil
  • 2 cups bread flour
  • 1 cup whole wheat flour
  • 2 teaspoons dried basil, oregano, or Italian seasoning, crushed
  • 3/4 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1 teaspoon active dry yeast or bread machine yeast
  • Cornmeal (optional)


  1. Add all of the ingredients except cornmeal to a 1-1/2- or 2-pound bread machine according to the manufacturer’s directions. Select the dough cycle.
  2. When the cycle is complete, remove dough from the machine. Punch down. Cover and let rest 10 minutes.
  3. For thin-crust pizza: Divide dough in half. For each pizza, grease an 11- or 12-inch pizza pan or a large baking sheet. If desired, sprinkle pan with cornmeal.
  4. On a lightly floured surface, roll 1 portion of dough into a 12- to 13-inch circle. Transfer to prepared pan, building up edge slightly.
  5. Prick crust with a fork. Do not let the dough rise.
  6. Bake in a 425 degree F oven 10 to 12 minutes or until lightly browned. Add the desired topping.
  7. Bake for 10 to 15 minutes more or until the edge of the crust is golden brown and the topping is bubbly.
  8. For thick-crust pizza: Grease a 13- or 14-inch pizza pan. If desired, sprinkle greased pan with cornmeal. With greased fingers, pat dough into prepared pan, building up the edge.
  9. Cover and let rise in a warm place for 30 to 45 minutes or until nearly double.
  10. Bake in a 375 degree F oven for 20 to 25 minutes or until lightly browned. Add the desired topping.
  11. Bake for 15 to 20 minutes more or until the topping is bubbly.
  12. Makes two 11- or 12-inch thin-crust pizzas or one 13- or 14-inch thick-crust pizza (6 servings).

Deep Dish Dough


  • 1 cup warm water, 105°f to 115°f
  • 1/4 cup vegetable oil
  • 1 packet active dry yeast
  • 2 cups flour


  1. Combine warm water, oil, and yeast; fold in the flour and mix thoroughly.
  2. Roll into a ball; place in an oiled bowl and let rise in the refrigerator overnight.
  3. Bring to room temperature before putting it in the pizza pan.
  4. Coat a deep-dish pizza pan with oil or cooking spray.
  5. Spread dough evenly around the bottom and sides of the pan.
  6. Cover with a cloth and let rise for 30 minutes at room temperature.
  7. Preheat oven to 450°F.
  8. Remove the cloth and cover dough with preferred pizza toppings.
  9. Bake until crust is brown on the edges, 30 to 40 minutes.
  10. Cut into wedges and serve at once.

Basic Pizza Dough


  • 1 packet active dry yeast
  • 1 cup of warm water
  • 1 tablespoon vegetable oil
  • 1 teaspoon salt
  • 3 cups flour, divided


  1. Dissolve yeast in warm water (105° to 115°F); stir in oil and salt. Beat with an electric mixer at low speed for 1 minute, scraping the sides of the bowl often.
  2. Continue beating for another 3 minutes at high speed. Fold in 2½ cups flour.
  3. Dust a work surface with flour and knead in enough remaining flour to make a moderately stiff dough that is smooth and elastic, 6 to 8 minutes.
  4. Grease a bowl and top of the dough. Cover and let rise in a warm place for 1 hour or until doubled.
  5. Coat pizza pan with a dab of oil or cornmeal to prevent the crust from sticking. Punch down and spread the dough into pizza pan.

  • 6 ounces tomato paste
  • 1/4 teaspoon oregano
  • 3 cups of water
  • 1/4 teaspoon basil
  • 3 tablespoons oil
  • 1/2 teaspoon parsley
  • 1 garlic clove, chopped
  • 1 teaspoon Parmesan cheese, grated
  • 1/4 cup onion, chopped
  • 1 teaspoon pepper
  • 1/2 teaspoon brown sugar


  1. In a saucepan combine tomato paste, oregano, water, basil, oil, parsley, chopped garlic clove, grated Parmesan cheese, chopped onion, pepper, and brown sugar. Cook for 30-40 minutes.

Basic Garden Sauce


  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 1 cup chopped mushrooms
  • 1 29-oz. can stewed tomatoes
  • 1 6-oz. can tomato paste
  • 2 cloves garlic, peeled and chopped
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1 bay leaf
  • 1/8 teaspoon sugar
  • 1/8 tablespoon hot pepper sauce


  1. Heat oil in a large skillet.
  2. Add onions and sauté 1 minute.
  3. Add green pepper and sauté 3 minutes.
  4. Add mushrooms and cook for an additional 2 minutes, or until tender.
  5. Add stewed tomatoes, tomato paste, garlic, basil, oregano, bay leaf, sugar, and hot pepper sauce.
  6. Simmer for 30 minutes, stirring occasionally.
  7. Remove the bay leaf prior to spreading sauce on the pizza.

Italian Pizza Sauce

  • Ingredients:
  • 6 ounces tomato paste
  • 1 garlic clove, chopped
  • 3 cups of water
  • 1 teaspoon oregano
  • 3 tablespoons oil
  • 1/4 teaspoon marjoram
  • 1 teaspoon pepper
  • 1/4 teaspoon basil
  • 1 teaspoon dried onion flakes
  • 1 teaspoon brown sugar
  • 1 teaspoon Parmesan cheese, grated


  1. In a saucepan combine tomato paste, chopped garlic clove, water, oregano, oil, marjoram, pepper, basil, dried onion flakes, brown sugar, and grated Parmesan cheese. Cook for 30-40 minutes.

Anise Flavored Pizza Sauce


  • 1 6-oz. can tomato paste
  • 2 8-oz. cans tomato sauce
  • 2 tsp. anise seeds, freshly ground
  • 1/4 tsp. pepper
  • 1/4 tsp. garlic powder
  • 1 tsp. oregano
  • 1 tsp. Italian seasonings
  • 1 tsp. chopped parsley


  1. Grind the anise seeds.
  2. Mix it all together.
  3. Spread on the dough.

Easy Pizza Sauce


  • 15 ounces stewed tomatoes; 28 ounces tomato sauce; 3/4 cup oil
  • 2 tablespoons Parmesan cheese, grated
  • 1 tablespoon sugar; 1 tablespoon dried parsley
  • 1 tablespoon oregano; 1 teaspoon garlic salt
  • 1 teaspoon salt; 1/2 teaspoon pepper

  • 1 pound pork sausages
  • 3 eggs
  • 2 cups Bisquick
  • 1 cup frozen hash browns, thawed
