Healthy lunch meal recipes can be simple yet satisfying using the right ingredients.

At the mid-day point, all of us start to get hungry, and consuming a quick, nutritious meal can give you the boost of energy you need to finish out the rest of your day be it at work, home with the kids, or just out running errands.

Who says that lunches are hard to prepare and very time-consuming? There are lots of simple lunch recipes out there and you just have to keep an eye out for them!

People who look for simple meal recipes are generally the ones who do not have time to think about rustling up something fancy since they have got a lot of work and deadlines to meet.

Working people find it very hard to get good nutrition and that is why they are always on the lookout for healthy and simple recipes.

Most of the simple lunch recipes comprised of salads because these are not only easy to make but they are also very delicious and healthy. You can also add a slice or two of brown bread or parmesan toast in order to fill you up. A lovely thing about this salad is that it is very presentable, it has everything from colors to flavors!

You can use all sorts of vegetables as long as it can be peeled into ribbons with the help of peelers. You can throw in squashes, zucchinis, carrots, etc into your salad. You can also turn the salad into a non-vegetarian salad by adding diced cooked chicken breasts since it is quite obvious that you cannot cut the chicken into ribbons! For the dressing, you can use any salad dressing of your choice!

Another good lunch recipe that you can try out is a chicken sandwich. Simply take two slices of brown bread or any other type of bread of your choice and spread mayonnaise or hummus on top of it. If you like these spreads a lot then you should spread them on both the slices.

This sandwich is a great way of using leftover grilled chicken or turkey. You can also add some fresh vegetables to the sandwich like sliced tomato, sliced onions, sliced cucumbers, and lettuce.

If you want your sandwich to be spicy then you can drizzle a bit of hot sauce on top of the chicken and then lay down the other piece of bread. Cheese slices are also a great addition to this sandwich.

You can also add your own twist to the typical sandwich by using coleslaw instead of fresh vegetables and hummus/mayonnaise. Simply take two slices of bread, add a piece of grilled chicken to it and slap on a huge spoonful of coleslaw. It works wonderfully!

Likewise, you can also use the leftovers for preparing fried rice, just dice up some vegetables and leftover meat and throw them all into the wok along with rice for some stir-frying action!
